Crispy potato latkes become a satisfying meal when paired with a warm mushroom gravy. The potatoes develop a golden exterior while staying tender inside, creating a pleasant contrast with the soft mushrooms and smooth sauce.
Sesame seeds and green onions add extra texture and freshness, while a lightly sweet and tangy seasoning gives the gravy a balanced finish.

Ingredients

For the latkes:
2 medium potatoes, grated
¼ small onion, grated
1 small egg
2 tablespoons all-purpose flour
¼ teaspoon salt
⅛ teaspoon black pepper
Vegetable oil, for frying
For the mushroom gravy:
4 ounces mushrooms, sliced
1 teaspoon vegetable oil
1 teaspoon all-purpose flour
½ cup vegetable stock
1 teaspoon soy sauce
1 teaspoon rice vinegar
1 teaspoon maple syrup
½ teaspoon toasted sesame oil
1 teaspoon sesame seeds
1 tablespoon green onions, chopped
Preparation time: about 15 minutes
Cooking time: about 20 minutes

Preparing the Potato Mixture

Wash and dry the potatoes before grating them. The grated potatoes and onion should then be wrapped in a clean kitchen towel and squeezed firmly to remove excess moisture. This step helps the latkes become crisp during cooking rather than soft from trapped liquid.
Place the drained potatoes and onion in a bowl. Add the egg, flour, salt, and black pepper, then mix until everything is evenly combined. The mixture should be moist but firm enough to shape into patties without falling apart.

Instructions

1. Heat a thin layer of vegetable oil in a skillet over medium heat.
2. Take a portion of the potato mixture and form it into a thin, compact patty.
3. Place the patty in the hot oil and gently press it flatter with a spatula.
4. Cook until the bottom becomes deeply golden and crisp.
5. Carefully turn the patty and cook the other side until browned and firm.
6. Transfer the cooked latke to a plate lined with paper towels and continue with the remaining mixture.
7. Heat the vegetable oil for the gravy in a small saucepan or skillet over medium heat.
8. Add the sliced mushrooms and cook until they soften and begin to develop a light brown color.
9. Sprinkle the flour over the mushrooms and stir until evenly distributed.
10. Slowly pour in the vegetable stock while stirring continuously to create a smooth sauce.
11. Add the soy sauce, rice vinegar, maple syrup, and sesame oil.
12. Let the mixture simmer gently until the gravy thickens enough to coat the mushrooms.
13. Taste the sauce and adjust the seasoning if needed.
14. Place the warm latke on a serving plate and spoon the mushroom gravy over the top.
15. Finish with sesame seeds and chopped green onions, then serve immediately.

Keeping the Latkes Crisp

Removing as much water as possible from the grated potatoes is one of the most useful steps in the preparation. Wet potato shreds can release steam during cooking, making it harder for the surface to become crisp. The shape also matters. Thin patties have more surface area touching the skillet, allowing them to brown more evenly. Avoid making them excessively thick, especially if a crunchy exterior is the goal.
Give each patty enough room in the skillet as well. Overcrowding can make the cooking temperature drop and may prevent the potatoes from developing an even crust.

Making the Mushroom Gravy

The mushrooms should have enough time to soften and develop some color before the flour and liquid are added. This creates a more flavorful foundation for the sauce. Add the vegetable stock gradually while stirring. Doing this helps the flour blend smoothly into the liquid. Once the sauce starts to simmer, it will gradually become thicker.
If the gravy becomes too thick, stir in a small amount of vegetable stock. If it is too thin, continue simmering for another minute or two. The finished consistency should be thick enough to sit comfortably on the latke without completely soaking it.

Serving Suggestions

Add the mushroom gravy shortly before serving so the potato crust retains some of its crisp texture. A generous spoonful is enough to add flavor without completely covering the golden surface. Sesame seeds provide a small amount of crunch, while green onions bring a fresh contrast to the warm mushroom sauce. For the best result, serve the dish immediately after assembling it.
Mushroom gravy gives crispy potato latkes a fresh direction while keeping the preparation straightforward. The combination of golden potatoes, tender mushrooms, savory seasoning, sesame seeds, and green onions creates a dish with contrasting textures and flavors. Careful moisture removal and proper browning are the main keys to achieving crisp, satisfying latkes.
